We hand-pick, wash, and sort 29 of the highest quality heirloom apple varietals from the 2014 harvest; we cold-press to make the fresh juice. Double fermented before using a charmat fermentation process that creates the natural carbonation and perfect finish to this unique, effervescent cider. The champagne qualities are evident when you pop the cork, but you'll never mistake the apple flavor and complexity!

Our Diehard Cider is made exclusively from a blend of Spitzenburg, WInesap, and Newtown Pippin apples. These apples are not your typical grocery store offerings. We choose to use these varietals because they are incredibly dense and flavorful. Cider makers covet these varietals and for good reason: they make better juice and better juice makes better cider. Incredible acid-sugar balance makes this a very rare cider. A hint of residual sugar allows for a true apple mouth-feel.

The Mission-Trail Dryhard Heirloom Cider is made exclusively from 100% Newtown Pippin apples. This cider is completely bone-dry, as in 0 grams of residual sugar, but the Newtown Pippin varietal gives the cider an incredibly fruity, aromatic, and tart profile. We aged this cider one year in tank to bring clarity, and crispness to the Dryhard.

Lockwood Reserve

From the 2015 harvest comes our Lockwood Reserve. A blend of crabapple and heirloom varieties, we fortified this cider with a pinch of Applejack brandy and let sit in brandy barrels for about a month. Any longer and the smoothness of this cider would be overpowered by the brandy oak. This is a clean, low acid, completely dry, complex cider with subtle hints of brandy and oak but an easy drinker that pairs well with food, or goes great in cocktails!Less than 70 cases in batch one. ...
