2016 Pluot Jerkum with Cherries, Peach, Rose Petals, and Asian Perry. Barrel Fermented with traditional Japanese Sake yeast and barrel aged 24 months. Back in 2016 we made a small batch of Pluot Jerkum and were lucky to acquire a few Champagne Cuvee French oak barrels from one of the best Champagne producers on the Central Coast. These barrels are special because the cuvee has high acidity and sharp character which is great for this purpose.
This Jerkum is infused with Cherries, Peach and Rose Petals and 10% Asian Perry to accentuate the floral and dry fruit character of this aromatic blend.
